Ingredients:
1 tsp olive oil (to coat the pan)
1/4 cup bell pepper
1/4 cup red onion
1/4 cup tomato
1/4 cup mushroom
1/4 south western egg beaters
2 whole wheat tortillas

Drizzle oil in pan, add all veggies (bell pepper, onion, tomato, and mushrooms), add salt and pepper, cook veggies approximately 5 minutes, add egg beaters, cook eggs to your taste. Divide cooked mixture and place on top of tortillas. You can warm tortilla in the microwave or in the same pan for a few seconds on each side. I added my bean dip and salsa to add additional flavor.
Feel free to change out which veggies you prefer and add any topping you like; such a low fat sour cream or pico. Enjoy!
